Fennel seeds — saunf — are the dried fruit of Foeniculum vulgare, native to the Mediterranean but now grown extensively in India, particularly across Rajasthan, Gujarat, Punjab, Uttar Pradesh, and Madhya Pradesh as a Rabi (winter) crop. The seed's distinctive sweet, anise-like flavour comes primarily from anethole, its dominant aromatic compound — the same molecule responsible for the flavour of star anise and liquorice, which is why fennel and anise are often paired or substituted in recipes and formulations.
